Cooking from an American recipe in an Australian kitchen feels like it should just work. The recipe says cups, your drawer has cups, everyone speaks English. Then the banana bread comes out gluey, and you spend twenty minutes blaming the oven when the real culprit was the measuring equipment. The three big English-speaking cooking traditions use the same words for quietly different amounts, and the gaps range from harmless to genuinely destructive. Here is where each one sits, worst offenders first.
The cup problem
There are three cups in play. American recipe writers work to the US legal cup of 240 mL, which is the definition our converter uses for cooking conversions. The older US customary cup is 236.6 mL, and that is what an actual American measuring cup from the shops holds. The Australian metric cup is 250 mL. So an Australian cup carries about 4% more than the cup an American recipe author had in mind.
For a single batch, 4% usually hides inside normal kitchen sloppiness. Scale it up and it stops hiding. Take an American recipe that wants 3 cups of flour and triple it for a bake sale. Nine US cups of plain flour is about 1080 g. Nine Australian cups is about 1125 g, because each 250 mL cup holds roughly 125 g of flour instead of 120 g. You have now added 45 g of flour nobody asked for, close to three-eighths of a cup, and your dough is noticeably drier and tighter than the author's. Liquids drift the same way: nine cups of milk lands you 90 mL over, close to half a glass.
The fix is not to abandon cups. It is to know whose cup the recipe means, and to shave a little off each Australian cup when following American baking, or better, convert the whole thing to grams before you start.
The tablespoon trap
This is the nastiest one, and plenty of experienced cooks have never heard of it. An Australian tablespoon is 20 mL, four teaspoons. A US tablespoon is 15 mL (14.8 mL by strict definition), and a UK tablespoon is also 15 mL. Three teaspoons each. Use an Australian tablespoon on an American recipe and every tablespoon delivers a third more than intended.
For olive oil or soy sauce, nobody will notice. For potent ingredients, everyone will. Baking soda is the classic casualty: a third extra gives you that soapy, metallic tang and a crumb that browns too fast. Gelatine is the other one. A third more gelatine turns a soft panna cotta into something you could bounce. Baking powder, salt, cornflour in a slurry, yeast in bread, strong spices like cayenne: all of them punch above their volume, and all of them get wrecked by the extra 5 mL.
The teaspoon, mercifully, is 5 mL everywhere in modern use, so the safe habit is simple. When an American or British recipe says one tablespoon of anything powerful, measure three level teaspoons instead and skip the tablespoon entirely.
Cup, spoon and pint sizes side by side
The table below uses the exact legal definitions, rounded to one decimal place; the US figures are the ones built into our converter. Modern UK recipes rarely use cups at all, and Australia went metric in the 1970s, so a few cells describe usage rather than an official standard.

Pints and fluid ounces
The pint gap is enormous and catches people in both directions. A UK pint is 568 mL. A US pint is 473 mL. That is a 95 mL difference, a full 20%, on a unit that sounds identical in both countries. A British soup recipe calling for two pints of stock wants 1136 mL; measure it with American pint jars and you are 190 mL short, which is the difference between soup and stew.
The reason is a genuine fork in history. Both countries divide the pint into fluid ounces, but the UK uses 20 of them per pint and the US uses 16. The ounces themselves differ too, just the other way around: a UK fluid ounce is 28.4 mL while the US one is 29.6 mL. So the American ounce is bigger but the British pint is bigger. Nobody designed this to be memorable. When a recipe gives fluid ounces, check the recipe's country before converting, because 10 fl oz means 284 mL in London and 296 mL in Chicago.
Weights: stones, ounces and grams
Weight is the calmest territory, because a gram is a gram everywhere and an avoirdupois ounce is 28.35 g in every country that uses it. The quirks are cultural. Britain still weighs people in stone, a unit of 14 pounds or 6.35 kg, so a character in a UK novel who weighs 11 stone is about 70 kg. America uses pounds alone, at 453.6 g each. Australia is fully metric and has been for fifty years.
Where weight will still trip you up is older cookbooks. A British or Australian book printed before metrication lists ingredients in ounces: 8 oz of flour is 227 g, 4 oz of butter is 113 g. Those are honest, unambiguous weights, and converting them once with a calculator beats guessing with cups every time.
Temperature: gas marks and Fahrenheit
British recipes, especially older ones, give oven settings as gas marks. The scale runs from mark 1, a slow oven at about 140°C, up through mark 4 at 180°C, mark 6 at 200°C, and mark 9 at roughly 240°C for the fiercest heat. If a UK recipe says gas mark 4, an Australian fan-forced oven at 160°C is about right, since fan ovens run hotter than the conventional ovens those marks assume.
American recipes use Fahrenheit, and the numbers are large enough that nobody mistakes them for Celsius. The workhorse setting is 350°F, which converts to just under 177°C; call it 180°C conventional and get on with your day. 400°F is 204°C, and 425°F, common for roast vegetables and pizza, is around 218°C.
A strategy that actually works
Every ruined cross-country bake I have seen came from converting on the fly, spoon in one hand, phone in the other. The reliable approach takes five minutes and happens before anything gets measured.
First, identify the recipe's country. The tells are quick: Fahrenheit and sticks of butter mean American, gas marks and ounces mean British, and 20 mL tablespoons or 250 mL cups flagged in the notes mean Australian. Second, convert the entire ingredient list once, in writing, on paper or in your phone notes. Every cup to grams, every tablespoon to teaspoons or millilitres, every temperature to your own oven's scale. Third, cook from your converted list and ignore the original numbers completely.
